Bachelor’s, Associate Degree or Culinary Assistant: How to Choose Your Program

If you already know cooking is what you want to do, the real question is not whether to study but which culinary program to choose. ISAC offers three paths, and the right one depends less on which sounds most impressive and more on how it fits your life right now: your time, your goals, and where you are starting from.

Three questions to ask yourself first

Before comparing curricula, answer three things honestly. First, how much time can you give to your training? A multi-year commitment is not the same as a shorter route. Second, do you want to start working soon, or would you rather prepare to run your own project down the line? Third, what is your starting point: is this your first formal training, or do you already have kitchen experience you want to build on? Your answers point to most of the decision.

What each program offers

The Bachelor’s Degree in Gastronomy is the most complete option. Alongside technique, it covers the parts of the trade that decide whether a kitchen survives: costing, purchasing, and management. It suits you if you want the full picture and see yourself leading a team or a business, not only working a station.

The Associate Degree in Gastronomy is a shorter route into the job market. You still build real cooking skills and the discipline of service, but you reach the point of being employable sooner. It fits you if you want to get into a professional kitchen without the longer commitment.

The Culinary Assistant program runs for one year and focuses on the fundamentals: knife work, mise en place, and how a station holds together during service. It is a solid first step if you are new to the trade or want to test the work before committing to more.

These paths are not mutually exclusive

Choosing one program now does not close the others. Many cooks start with the fundamentals and continue later, letting real kitchen time shape what they study next. Deciding which culinary program to choose is less a permanent verdict than a first move you can build on as your goals sharpen.

Still weighing which culinary program to choose? Compare all three on the programs page, and if you want a straight answer for your situation, get in touch and talk it through with someone who knows the work.
